First off, I find the Amazing Grace theme to be a real work of art. I am using it for blog.curetinnitus.org, and I find that the theme resonates wonderfully with the message of my site. My site needs to be beautiful, inspiring, and peaceful…and that's how I would describe the Amazing Grace theme, so it's a perfect match.
Here are a few questions I posted in the comments, but didn't get a reply on.
I can’t see how “widgets” are working in this theme, and I can’t see how the Recent Posts, Categories, Archive, Blogroll, then the Search, Calendar, Tags ad Meta umm “Items” are organized.
Here’s what I mean: 1) If I wanted to change the order of Recent Posts and Categories, how would I do that? I mean “Categories” goes on top of Recent Posts. 2) If I wanted to limit the number of posts displayed in Recent Posts, how would I do that? 3) If I wanted to remove the calendar and move Tags and Meta one column to the left, how would I do that? 4) If I wanted to put a “Widget” the width of the “Recent Posts” and Search columns together, on top of those columns, how would I do that and place the widget correctly? 5) Are these columns widgets, because when I go to widgets in my Admin CP, there is “nothing” there. 6) How can I make both the Page Text Links (Top Nav Bar), and the Category Top-Level Headings into dynamic pull-down menus? 7) How can I choose where I want to "place" the login text?

I went to a post that has streamed video, and the display showed the sidebars under the post text. It looked pretty bad, and the video was not available for streaming. It's a Quicktime movie.

You do all that in the widgets screen of your design panel. When there are no widgets the theme fallbacks to default layout.

By default Amazing Grace display full posts. You would need to change the_content with the_excerpt in the index.php file.
